Processing: Grown by Jairo Arcila at Santa Monica. This microlot is 100% Castillo, exposed to a dry anaerobic fermentation period of 72 hours with the pulp on and ripe blackberries were added.The cherries were pulped and place to dry on raised beds to ideal moisture content.
