Processing: TIM stands for Terroir Intensified Maceration. This is a process protocol which Tri-Up has been researched for years. The process involved collecting the right microbes from the coffee cherries and surrounding environment, isolating them, and having them fermenting together with the coffee cherries. It amplifies the terroir profiles and makes sure that the fermentation result is in harmony.
The varietal 74158 is a varietal published by JARC, Jimma Agricultural Research Center. The varietal is draught resistant and with better yield while still having good quality. In our research, 74158 has stronger floral notes comparing to others, and still has beautiful citrus and stonefruit characters.
