Processing: Coffees are harvested using a combination of manual and mechanical picking. The most ocmmon processing emthods are wet and pulped natural. Ripe cherries are separated and spread on patios on the same day. The coffee remains on the patios until it reaches an average humidity of 20%, at which point it is transferred to dryers to achieve a final humidity of 11%.
