Processing: This coffee was grown by Jairo Arcila at the farm Santa Monica. The cherries undergo a dry anaerobic 48-hour fermentation, during this stage, Lychees and wine yeast were added. Following germentation, the cherries are pulped and thoroughly washed to remove the mucilage. One coffees are washed, they are spread out on raised beds for drying until they reach an optimal moisture level of 11-13%.
This crop is 100% Castillo. This variety was developed by Federación Nacional de Cafeteros. It is more productive than Caturra and resistant to coffee leaf rust.
